Valentines Leftovers for Dinner….and Lunch the next day!
The Meal: Feta Grilled Sandwich and side salad.
Use the leftover beet and green bean salad. Serve it next to a Feta grilled cheese sandwich using the bread and cheese leftover from dinner as well! Throw a bit of olive oil and sea-salt down on the grill just before you throw the sandwich onto the pan. Yum- as good as your corner café- and it didn’t cost $9.95 plus tip!
* Helpful tip: I like to prepare our lunches for the next day as I cook dinner. All of the ingredients are already out and it makes getting out the door the next morning so much faster!

The Salad:
Grill a chicken breast (recipe to come!) or use some leftover chicken strips (we got ours as free leftover happy hour food from the law school). Take the cooked chicken and throw it over the beet salad. It may help to add a bit of fresh lettuce and some more balsamic vinegar to make freshen the whole thing up!
The Wrap:
Heat a tortilla (this is so you will be able to roll it successfully without cracks or tears). Spread a tad mayo on the tortilla add salad mixture and roll! When at room temperature, wrap in foil (wrapping while still hot/warm will result in a soggy tortilla. yuk). You’ll be waiting to eat it all morning!
